Ingredients (4)

500.00 g peaches — dried
200.00 g sugar — depends on sweet peaches
560.00 g jelly — apricot or peach
castor sugar

Method:

Rinse the dried peaches well and boil in enough water until soft. Mince and pour the pureé into a heavy-bottomed saucepan. Add the sugar and heat slowly, stirring continuously, until the sugar has dissolved. Bring to the boil and boil for 5 minutes. Sprinkle the jelly powder over and heat until dissolved. Bring to the boil and pour into a greased pan. Leave until the mixture has set but is still moist. Cut into squares, arrange on trays and leave to dry completely (indoors). Roll the sweets in the castor sugar and store in airtight containers.
