Deep-fried leeks or spring onions

Ingredients

  • leeks
  • oil for deep-frying
  • coarse salt and black pepper
  • balsamic vinegar
 

Method

 
Rinse the leeks well and cut into long chunky strips. Separate the spring onions and pat dry. Deep-fry the leeks and spring onions in hot oil until tender. Drain and sprinkle generously with coarsely ground salt and black pepper and a little balsamic vinegar. Herbs such as sprigs of parsley, young beetroot leaves or spinach leaves can also be deep-fried and used as a garnish.
