Dark chocolate biscuits

    softened butter

    soft brown sugar

    vanilla essence
  • 2
    extra-large eggs, beaten
  • 280

    self-raising flour
  • 50

    cocoa
  • 200

    plain milk or dark chocolate slab, broken into smaller pieces
  • 30
    ml
    milk (approximately)
 

Method

 
Preheat the oven to 190 ºC (375 ºF). Grease a couple of baking sheets. Cream the butter and sugar together. Add the vanilla essence. Gradually add the eggs and beat well. Sift the self-raising flour and the cocoa together and fold into the mixture, along with the milk and chocolate pieces. Drop spoonfuls of the mixture onto the greased baking sheets, allowing room for the biscuits to spread. Flatten slightly with a spoon. Bake for 10 to 15 minutes or until golden brown and firm. Cool slightly on the baking sheets before transferring to a wire rack to cool completely. Store in an airtight container.
