Curry pineapple

  • 2
    large pineapples (peeled), and diced
  • 2
    onions, sliced into rings
  • 300
    g
    sugar
  • 5
    ml
    salt
  • 10
    ml
    curry powder
  • 3
    ml
    mustard powder
  • 125
    ml
    grape vinegar
  • 20
    ml
    cornflour
 

Method

 
Boil all the ingredients, except the cornflour, for about 20 minutes until the pineapple and onion are soft. Stir frequently. Blend the cornflour with a little cold water and add to the mixture. Bring to the boil and simmer for 1 minute, stirring continuously. Pour into sterilised jars and seal immediately. Makes about 1 litre.
