Curried onions

    kg
    onions, sliced into rings
  • 400
    ml
    smooth apricot jam
  • 400
    ml
    grape vinegar
  • 125
    ml
    sugar
  • 7
    ml
    curry powder
  • 7
    ml
    turmeric
  • 5
    ml
    salt
 

Method

 
Place the onion in a large mixing bowl (do not rinse). Blend the apricot jam, vinegar, sugar, curry powder, turmeric and salt. Add to the onions and mix well. Cover and leave overnight. Stir well before spooning into clean, sterilised jars. Store in the fridge. Serve with barbecued meat or fish. Makes about 2,5 to 3 litres.
