Curried fish

  • SAUCE
  • 15
    ml
    mild curry powder
  • 2
    ml
    salt
  • 5
    ml
    cornflour
  • 15
    ml
    brown sugar
  • 15
    ml
    vinegar
  • 200
    ml
    water
  • 750
    g
    hake, skinned
  • salt and pepper to taste
  • cake flour
  • oil for frying
 

Method

 
Combine the dry ingredients for the sauce, add the remaining sauce ingredients and heat while stirring until the sauce comes to the boil and thickens slightly. Cool. Season the fish with salt and pepper and dip in the curry sauce. Roll in cake flour and deep-fry until golden brown and cooked. Layer the fish and sauce in a dish and serve.
