Curried apricot cream

  • 100
    g
    soft dried apricots, chopped
  • warm water
  • generous tot brandy
  • 80
    ml
    sour cream
  • 100
    ml
    mayonnaise
  • salt and freshly ground black pepper to taste
 

Method

 
Soak the apricots in warm water to which the brandy has been added. Add the remaining ingredients and mix well. Drain the apricots and fold into the sour cream mixture.
