    coconut

    currants

    grated rind of lemons

    extra-large eggs

    ml
    milk
 

Method

Preheat the oven to 180 ºC (350 ºF) and spray a few baking sheets with non-stick spray or grease well. Sift together the self-raising flour and baking powder and rub in the butter with your fingertips until well blended. Mix the sugar, coconut, currants and lemon rind and add to the flour mixture, mixing well. Beat the eggs and milk together and add to the flour mixture, mixing well. Drop teaspoonfuls of the mixture onto the prepared baking sheets and bake for 10-12 minutes until pale brown and done. Cool slightly on the baking sheets before transferring to a wire rack to cool completely. Store in an airtight container. Makes about 105 cookies.
