Cucumber sandwiches

    cucumber, peeled and very thinly sliced
  • 60
    ml
    cream cheese
  • 60
    ml
    roughly chopped watercress
  • 8
    slices of quality white bread
  • 5
    pinch
    salt
  • 60
    ml
    alfalfa sprouts
 

Method

Place the cucumber slices between sheets of paper towels to absorb excess moisture.

Mix the cream cheese and watercress and spread half the bread slices with the mixture.

Top with the cucumber slices and season with salt.

Scatter the alfalfa sprouts on top. Cover with the remaining slices and carefully remove the crusts.

Quarter each sandwich diagonally.
