Cucumber and yoghurt sauce

    bunch fresh coriander, washed

    sprigs curry leaves
  • green chillies to taste
  • 2
    ml
    ground cumin
  • salt and milled black pepper

    ml
    desiccated coconut
  • 30
    ml
    lemon juice
  • 30
    ml
    vinegar
  • 15
    ml
    cream
  • 5
    ml
    olive oil
  • 1
    small cucumber, grated
  • 250
    ml
    natural yoghurt
 

Method

 
Mix coriander, curry leaves, green chillies and cumin and season to taste. Add coconut, lemon juice, vinegar, cream and olive oil. Add a dash of water and stir well. Mix with grated cucumber and yoghurt. Check seasoning and add a little more chilli, if desired. TOTAL KILOJOULE COUNT: 1 380 kJ (320 Cal).
