Cucumber and ginger salsa

Ingredients

  • 2
    ordinary cucumbers, peeled and diced
  • 1
    small red onion, finely chopped
  • 40
    ml
    chopped pickled ginger
  • 40
    ml
    chopped fresh mint
  • 20
    ml
    chopped fresh coriander
  • 20
    ml
    fish sauce
  • 20
    ml
    lemon juice
  • 15
    ml
    sweet chilli sauce
  • 5
    ml
    sesame oil
  • salt and pepper to taste
 

Method

 
Mix the cucumber, onion, ginger and herbs.
Add the remaining ingredients and mix lightly.
Cover and refrigerate for at least 15 minutes before serving with smoked trout fillets, seared tuna or prawns.
