Crustless milk tart squares

    milk

    Rooibos tea leaves

    margarine
  • 125
    g
    castor sugar
  • 4
    extra large eggs, separated
  • 120
    g
    cake flour
  • 5
    ml
    baking powder
  • 2
    ml
    salt
  • 5
    ml
    vanilla essence
  • 2
    ml
    lemon juice
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a 1,5 litre ovenproof dish with margarine. Add Rooibos tea leaves (or use a tea bag) to the milk and boil. Cool and strain. Beat the margarine and sugar together and add the egg yolks one by one. Beat well after each addition. Sift the dry ingredients together and fold into the sugar and egg mixture, alternating with the milk mixture. Add the vanilla essence and lemon juice. Beat the egg whites until stiff and fold into the mixture. Pour into the prepared dish. Bake for about 40 minutes or until the mixture has set. Cool and cut into squares.
