Crunchy meringues

    extra-large egg whites
  • 210
    g
    castor sugar
  • 60
    g
    cornflakes
  • 150
    g
    unsalted peanuts
 

Method

 
Preheat the oven to 100 ºC (200 ºF). Heat two baking sheets in the oven and grease with the back of a candle. Beat the egg whites until they form soft peaks and add the castor sugar by the spoonful. Beat until all the castor sugar has been added. Fold in the cornflakes and peanuts. Drop spoonfuls of the mixture onto the prepared baking sheet and bake until completely dried out (about two hours). Makes 30 meringues.
