Crisp nut batons

    butter
  • 200

    sugar
  • 2
    eggs
  • 10
    ml
    grated lemon peel
  • pinch of salt
  • 2

    ground cinnamon
  • 2
    ml
    grated nutmeg
  • 200

    hazelnuts, coarsely chopped
  • 300
    g
    cake flour
  • icing sugar for sprinkling (optional)
 

Method

 
Cream butter and sugar, add eggs and beat well. Stir in grated lemon peel, salt and spices. Add nuts and flour alternately, stirring, to make a firm dough. Allow to rest for half an hour, then roll out to 1 cm thick on a floured board. Cut into fingers and place on a greased and floured baking sheet. Bake in centre of oven at 180 ºC for 15 to 20 minutes. Shake onto a cooling rack and sprinkle with icing sugar, if desired.
