Crisp baby potatoes

  • 500
    g
    baby potatoes
  • 5
    ml
    salt
  • 45
    ml
    butter
  • 65
    ml
    finely grated Parmesan cheese
 

Method

 
Preheat oven to 200 ºC, Score the jackets of the potatoes lightly with a fork and boil, skin and all, until just cooked. Melt the butter and mix with the potatoes. Sprinkle with the cheese and mix until well coated. Roast in the oven for about 10 minutes until crisp and golden brown. Serve hot. Serves 4.
