Creamy vegetable bake

    small courgettes, finely grated

    sweet potatoes, peeled and grated
  • 1
    bunch spring onions
  • 125
    ml
    cream
  • 40

    finely grated Parmesan cheese

    ml
    dried basil
  • 5
    ml
    dried thyme
  • salt and freshly ground black pepper to taste
  • 250
    ml
    finely chopped spinach, cooked
  • 1
    clove garlic, crushed
  • 250
    g
    cherry tomatoes, halved
 

Method

 
Preheat the oven to 180 ºC and grease a 26 cm square oven dish with butter. Combine the eggs, courgettes, sweet potatoes and spring onions in a large mixing bowl. Mix the cream, cheese and herbs together and season with salt and pepper. Add the cooked spinach and garlic to the cream mixture and stir. Combine the egg and cream mixtures and stir in the cherry tomatoes. Turn the mixture into the prepared dish and bake for 35-40 minutes until heated through. Remove from the oven, allow to cool slightly and cut into squares. Serve hot or at room temperature with wholewheat bread rolls. Serves 8-10.
