    ml
    butter or margarine
  • 1
    bunch spring onions, finely chopped
  • 10
    ml
    crushed garlic
  • 250
    ml
    frozen sweetcorn
  • 125
    ml
    chopped mushrooms
  • salt and freshly ground black pepper to taste
  • 750
    ml
    cooked samp
  • 125
    ml
    cream
  • 250
    ml
    vegetable stock
 

Method

1. Melt butter and sautè spring onions and garlic until soft, add sweetcorn, mushrooms and seasoning.
2. Add cooked samp and cook for 5 minutes, slowly add cream and stock, stirring frequently until liquid is absorbed but samp is still moist.
3. Serve warm with grilled meat and vegetables in season.
