6.00 ciabatta rolls
0.00 olive oil — spray
10.00 eggs
30.00 ml cream cheese — fat-free
65.00 ml fresh chives — finely chopped
0.00 salt and freshly ground black pepper
12.00 parma ham — slices

Method:

Preheat oven to 180 @degC.
Halve rolls and remove part of the dough to create a cavity.
Spray with olive oil and bake for about 10 minutes until inside is crisp.
Whisk eggs, cream cheese, chives and seasoning together in a bowl.
Heat olive oil in a pan and slowly cook eggs until creamy and just set.
Spoon into rolls, top with Parma ham and serve with steamed asparagus.
