Creamy chicken and mushroom bake

    large chicken, cooked, deboned and with the skin removed

1. Heat the oil in a large frying pan and fry the onions for about two minutes until soft. Add the green pepper and mushrooms and cook for another minute. Stir in the chicken, cream and bacon-flavoured biscuits and season. Spoon the mixture into a greased ovenproof dish. 2. Cheese sauce Melt the butter in a saucepan and whisk in the fl our. Cook over a medium heat for one minute while whisking continuously. Add the milk a little at a time, whisking continuously so that lumps don't form, and taking care not to let it boil. Remove from the heat and stir in the cheese. 3. Pour the sauce over the chicken mixture and bake in a preheated oven for 30 minutes until golden on top. Serve with rice and salad.
