Creamed curry beans

  • 400
    g
    young green beans, topped and tailed
  • 15
    ml
    water
  • 40
    ml
    butter
  • 2
    ml
    salt
  • pinch freshly ground black pepper
  • 3
    ml
    curry powder
  • 125
    ml
    sour cream
 

Method

 
Cut beans into bite-size pieces and place in a saucepan with the water, butter, salt and pepper. Bring to the boil, cover and simmer slowly until just done but still crunchy. Drain, reserving the liquid. Mix the curry powder with the liquid and fold into the sour cream. Add the beans and mix gently. Leave to cool and serve as a side dish or a salad with braaivleis or cold meats. Serves 4.
