Crab and prawn toast with fried onion rings

    buttermilk

    medium onions, peeled, thickly sliced and separated into rings
  • sunflower oil for deep-frying
  • SANDWICHES
  • 400
    g
    fresh crabmeat
  • 100
    ml
    good-quality mayonnaise
  • 30
    ml
    garlic butter, softened
  • 8
    slices farmhouse bread, toasted
  • 2
    tomatoes, sliced
  • lettuce leaves
  • 16
    medium prawns, shelled and cooked
  • salt and milled black pepper
 

Method

 
ONION RINGS: Mix flour, buttermilk and salt in a bowl to make a batter. Add onion rings, covering them well with batter, and refrigerate for 1 hour. Heat oil in a deep frying pan or saucepan and deep-fry onion rings. SANDWICHES: Mix crabmeat and mayonnaise. Spread garlic butter on hot toast. Layer crabmeat, tomatoes, lettuce and prawns on 4 slices of toast. Season to taste. Top with remaining toast and serve with onion rings.
