Cous cous salad

    cup
    cous cous
  • 200
    g
    roasted vegetables
  • 2
    cup
    cous cous
  • 3
    chillies, chopped
  • a handful
    rocket
  • 2
    wheels of feta cheese
  • 2
    Tbs
    coriander and pecan nut pesto
  • olive oil to dress
 

Method

5 mins
 
Make cous cous.
Arrange cous cous on a plate and layer rocket leaves on top.
Add roasted vegetables and chillies.
Sprinke with chunks of feta cheese, coriander and pecan nut pesto.
Drizzle with olive oil.
