Courgette soup with red pepper croûtons

    onions, chopped
  • 50
    g
    butter
  • 1
    kg
    courgettes, topped, tailed and roughly sliced
  • 1
    Litres
    vegetable or chicken stock
  • star-;shaped croutons
  • 1
    red pepper, julienned, stir-fried and chopped
  • sprigs of sage, to garnish
 

Method

25 minutes
 
Heat butter in a large saucepan and cook onions over a gentle heat. Do not allow to brown. Add courgettes and toss. Add vegetable or chicken stock. Bring to boil and simmer 20 minutes until tender. Liquidise until smooth or pass through a sieve. Season and allow to cool. Garnish with croutons, topped with red pepper and sprigs of sage.
