Courgette crumpets

    medium courgettes, washed and grated
  • 30
    ml
    cake flour
  • pinch salt
  • 2
    extra-large eggs, whisked
  • 65
    ml
    cream
  • 65
    ml
    olive oil
  • 2
    large cloves garlic, crushed
 

Method

 
Pat the grated courgettes dry with paper towelling. Set aside until needed. Mix the cake flour and salt in a mixing bowl. Add the eggs, cream and olive oil and stir well with a wire whisk until smooth and free of lumps. Add the garlic and courgettes and mix. Heat a little oil in a pan and drop spoonfuls of the mixture into the hot pan. Fry until brown on both sides. Serve hot as a side dish. Makes 8-10 crumpets.
