Country fruit cups

    ml
    sugar
  • 250
    ml
    medium cream sherry
  • 2
    sticks cinnamon
  • 2
    whole allspice
  • 250
    g
    cling peaches, pitted, peeled and quartered
  • 250
    g
    apricots, peeled, cored and cut into quarters
  • 250
    g
    plums, peeled, pitted and halved
  • 250
    g
    black and green grapes
  • 1
    small lemon, the zest
  • GARNISH
  • 8
    mint sprigs
  • cinnamon sticks
  • ground cinnamon
 

Method

 
Place sugar, water, sherry and spices into a large pot and simmer until sugar is dissolved completely.
Bring to the boil, add fruit and poach until tender.
Remove from heat and allow fruit to cool in the liquid.
Spoon fruit in glass bowls and drizzle with remaining syrup.
Garnish with mint sprigs, cinnamon sticks and ground cinnamon.
