    dark chocolate, chopped

    walnuts, chopped

    cinnamon

Method

Preheat the oven to 180 ºC and spray a 23 cm loose-bottomed cake tin with non-stick spray, Line the base with a double layer of wax paper. Beat the butter and sugar together until light and fluffy. Stir in the cottage cheese. Add the eggs one by one, beating well after each addition. Sift the dry ingredients over the butter mixture and fold in. Add the vanilla essence and mix. Turn the batter into the prepared tin and sprinkle the chocolate, walnuts and cinnamon on top. Mix lightly with a knife and bake for 40-60 minutes until a testing skewer comes out clean. Cool the cake in the tin for a few minutes before turning out onto a wire rack to cool completely. Melt the 100 g chocolate and drizzle over the cake. Leave until set. Makes 1 medium-sized cake.
