Corn rice salad

    uncooked corn rice
  • 1
    large red onion, chopped
  • 1
    English cucumber, finely chopped
  • 65
    sun-dried tomatoes, chopped
  • 1
    bunch rocket, chopped
  • vinaigrette dressing of your choice


Cook corn rice according to packet instructions. Rinse under cold running water and allow to cool to lukewarm. Toss all ingredients together, reserving a few whole rocket leaves for decoration. Serve as a side salad or add cubed feta cheese, diced cooked chicken or another protein and serve as a main dish.
