    rindless streaky bacon, chopped
  • 2
    medium onions, chopped
  • 3
    sticks celery, sliced
  • 600

    chicken stock
  • 1
    potato, peeled and cubed
  • 340
    g
    whole kernel corn, drained
  • 2
    chicken breast fillets, sliced
  • 125
    ml
    cream
 

Method

25 minutes
 
Heat the oil in a saucepan and fry the bacon over a low heat for one minute. Add the onion and celery and fry for two minutes. Add the stock and potatoes and allow to simmer, covered, for 15 minutes. Season to taste and serve garnish with fresh chives.
