Corn blinis

Ingredients

    g
    x 340 g can sweetcorn kernels, drained
  • 125
    ml
    cream
  • 2
    eggs
  • 125
    ml
    cake flour
  • 15
    ml
    castor sugar
  • 30
    g
    melted butter
  • pinch of salt
  • flaked tuna
  • sour cream
  • parsley leaves
 

Method

30 minutes
 
Mix together the sweetcorn kernels, cream, eggs, cake flour, castor sugar, melted butter and salt.
Shallow-fry spoonfuls of the mixture in a pan until golden brown and cooked on both sides.
Drain on paper towels and leave to cool.
Place a little flaked tuna one each blini and spoon a little sour cream on top.
Garnish each blini with a parsley leaf.
