    handfuls fresh coriander leaves
  • 4
    cloves garlic, crushed
  • 15
    ml
    lemon juice
  • 65
    ml
    olive oil
  • 2
    ml
    salt
  • 2
    ml
    freshly ground black pepper
 

Method

 
Blend the coriander leaves and garlic in a food processor. With the machine still running, slowly drizzle in the lemon juice and oil, processing until the coriander is puréed. Transfer the pesto to a bowl and stir in seasoning. Refrigerate covered, until ready to use.
