Coriander chicken

Ingredients

    cooked chicken, skin removed, cut into chunky pieces
  • 45
    ml
    fresh coriander leaves
  • 50
    g
    nuts (cashews, peanuts or almonds), toasted
  • 150
    ml
    plain Greek yoghurt
  • 250
    ml
    French dressing
  • 10
    ml
    ground coriander
  • 5
    ml
    paprika
  • 5
    ml
    cumin
  • 30
    ml
    mango chutney
 

Method

 
Place the chicken, fresh coriander and nuts in a large bowl. Place yoghurt into another bowl and gradually whisk in the dressing. Add the ground coriander, paprika, cumin and mango chutney, and mix well. Stir the yoghurt dressing into the bowl of chicken. Chill in the fridge until needed.
