Coq au vin (Chicken in red wine)

    butter
  • 100
    g
    rindless streaky bacon, diced
  • 12
    pickling onions, peeled
  • 1
    kg
    chicken pieces
  • 30
    ml
    flour
  • 2
    cloves garlic, crushed
  • 600
    ml
    red wine
  • 3
    ml
    dried mixed herbs
  • 250
    g
    small fresh button mushrooms, cleaned
 

Method

50 minutes
 
Heat butter in a saucepan and add bacon and onions. Fry gently for five minutes then remove from the pan and reserve. Fry chicken pieces until golden brown, then sprinkle with flour. Stir in bacon, onions and garlic and cook for a minute. Add wine gradually, then add herbs and season to taste. Cover and allow to simmer for 30 minutes. Add mushrooms and simmer for 10 minutes then serve.
