Contemporary baked beans on toast

    butter beans, drained

    spring onions, chopped
  • 12
    cherry tomatoes, halved
  • 6
    sage leaves
  • 60
    ml
    olive oil
  • salt and milled pepper to taste
  • 6
    thick slices ciabatta
  • 1
    clove garlic, peeled and halved
  • olive oil
  • basil leaves
 

Method

 
Preheat oven to 200 ºC. Place beans, onions, tomatoes and sage leaves in a roasting pan with oil and seasoning. Roast for 20 minutes. Toast bread lightly on both sides. Rub with garlic. Pile bean mixture on top and drizzle with olive oil. Top with basil.
