Colourful beef chow mein

Ingredients

    vegetable stock cube
  • 40
    ml
    cornflour
  • 400
    g
    beef fillet, cubed
  • 45
    ml
    oil
  • 1
    clove garlic, crushed
  • 1
    medium carrot, cut into julienne slices
  • 1
    each, red and yellow pepper, cubed
  • 100
    g
    green beans, sliced into quarters
  • 6
    spring onions, thickly sliced
  • 400
    ml
    vegetable stock
  • cooked noodles, to serve
 

Method

15 mins
 
Crumble the stock cube and mix with cornflour.
Dust the beef cubes in the mixture, to coat well.
Heat the oil in a large saucepan until very hot.
Add the meat and stir-fry to brown the meat.
Add the garlic and vegetables and stir-fry for a further minute.
Add the stock gradually, stirring constantly until mixture has thickened.
Serve immediately with prepared noodles.
