Coffee risotto pudding

    orange, grated peel and juice

    water

    arborio rice
  • 600
    ml
    milk
  • 1
    vanilla pod
  • 100

    sugar
  • 25
    ml
    butter
  • 175
    ml
    cream, whipped
  • grated nutmeg and orange peel
 

Method

 
Place coffee, orange juice and water in a saucepan and bring to boil. Remove from stove, add rice and leave to soak for 5 minutes. Return pan to stove and add milk and vanilla pod. Cook over low heat until rice is tender but still slightly firm to the bite. Remove from stove, add sugar, orange peel, butter and cream and stir gently. Serve at once, decorated with grated nutmeg and orange peel.
