Coconut prawns

    olive oil
  • 60
    ml
    chopped onion
  • 15

    chopped garlic
  • 2
    bay leaves
  • 4
    rashers bacon
  • salt and milled black pepper to taste
  • 60

    coconut milk
  • 30
    ml
    butter
  • 20
    ml
    coconut liqueur (optional)
  • 6
    large prawns
  • 1
    lemon, cut into wedges
  • parsley to garnish
 

Method

 
Heat oil in a pan and sauté onion, garlic, bay leaves and bacon until onion is transparent. Sprinkle with salt and milled black pepper and sauté until lightly browned. Add coconut milk and cook for about 5 minutes. Add prawns and cook for about 5 minutes, or until prawns are firm and pink. Strain sauce into a sauce boat. Serve prawns on heated dinner plates, accompanied by sauce, and garnished with lemon wedges and parsley.
