Coconut ice cream with mango sauce

  • ICE CREAM
  • 2
    extra-large eggs
  • 30
    ml
    castor sugar
  • 200
    g
    white chocolate, broken into squares
  • 400
    ml
    coconut milk (see recipe)
  • 250
    ml
    cream, chilled
 

Method

 
Beat the eggs and sugar together in a glass bowl over boiling water until pale yellow. Melt the chocolate in a glass bowl over boiling water or in the microwave oven. Stir occasionally. Add to the egg mixture, blending thoroughly. Add the coconut milk and mix. Whip the cream until stiff and fold the cream into the mixture. Pour the mixture into a loaf tin, cover with plastic wrap and chill. Serve with the mango sauce.
