Coconut balls

    g
    castor sugar
  • 230
    g
    margarine
  • 2
    eggs, well beaten
  • 240
    g
    coconut
  • 110
    g
    cherries, coarsely chopped
  • 1
    packet Tennis biscuits, crushed
  • 2
    ml
    vanilla essence
  • extra coconut to coat the balls
 

Method

 
Heat the castor sugar and margarine in a saucepan and stir until all the sugar has melted. Add the eggs and heat slowly, stirring continuously, until the mixture has thickened slightly. Remove from the heat and add the remaining ingredients, except for the last bit of coconut. Mix well, form into balls and roll in the extra coconut. Makes 75 balls.
