Coconut And Lemon Pudding

    butter
  • 320
    g
    sugar
  • 3
    large eggs
  • 150
    g
    cake flour
  • 15
    ml
    baking powder
  • 155

    desiccated coconut
  • 10
    ml
    grated lemon zest
 

Method

1. Place the butter, half the sugar, the eggs and 250ml lukewarm water in a bowl and mix well.

2. Add the flour, baking powder and coconut, stirring until well combined. Pour into a round or square greased two-litre microwave-safe dish.

3. Place the dish on top of an upside- down saucer in the microwave and cook on full power for eight to 10 minutes. Remove from the microwave and allow to stand for 10 minutes.

4. Place the remaining sugar, the lemon zest and 375ml water in a microwave-safe jug and cook on full power in the microwave for five minutes. Remove the liquid from the microwave and pour over the pudding. Enjoy warm or cold with custard or ice cream.
