Cocoa and almond biscuits

    ground almonds
  • 450
    g
    icing sugar, sifted
  • 80
    g
    cocoa, sifted
  • 5
    ml
    ground cinnamon
  • 2
    ml
    cloves
  • 2
    ml
    coriander
  • 3
    egg whites
  • 45
    ml
    brandy
  • 120
    g
    white sugar
 

Method

+/- 10 min per batch
 
Preheat the oven to 180 ºC (350 ºF). Spray two large baking trays with non-stick spray. Combine the ground almonds, icing sugar, cocoa, cinnamon, cloves and coriander in a large mixing bowl. Mix well. Beat the egg whites until foamy and add the brandy. Add to the dry ingredients and mix well. Knead to form a dough and wrap in plastic wrap. Chill for two hours. Sprinkle half the white sugar on a surface suitable for rolling out the dough. Roll the dough out until 5 mm thick. Sprinkle the dough with the remaining sugar and roll it into the dough with the rolling pin. Prick with a fork. Cut out shapes with a cookie cutter and place …
