    cottage cheese

    natural yoghurt

    ml
    marmalade or kumquat jam

    ml
    cake flour
  • 2
    ml
    lemon rind, grated
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Melt the butter and remove from the heat. Sift the cake flour, salt and mixed spice together and add the butter. Mix well and add just enough milk to form a stiff dough. Cool and roll out into a circle, 5 mm thick. Line a 24 cm pie dish with the pastry and bake blind for about 10-20 minutes. Beat the eggs well and add the sugar by the spoonful. Beat until light and creamy. Add the remaining ingredients and mix well. Pour into the baked pastry shell. Bake for about 45-50 minutes. Makes 12 slices.
