Citrus-flavoured tuna

    fresh tuna steaks
  • salt and milled pepper
  • sunflower oil for frying
  • chopped fresh coriander
  • thin citrus peel strips to garnish (optional)

    crushed dried chilli

    ml
    orange juice
  • 15

    fish sauce (optional)

    ml
    sugar
  • salt and milled pepper
 

Method

 
Season tuna with salt and pepper. Heat oil in a frying pan until very hot and sear tuna briefly on both sides. TOPPING: Mix all ingredients and pour over fish. Cook over high heat, turning once, for a total of 5 minutes. Stir in coriander, garnish with citrus peel and serve immediately. Boiled baby potatoes and a large green salad are the ideal accompaniments to this dish.
