Cinnamon yoghurt cake loaf

    vanilla essence

    cake flour

    baking powder

    bicarbonate of soda

    salt
  • 250
    ml
    plain yoghurt
  • 50
    ml
    sugar
  • 5
    ml
    ground cinnamon
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray a 23 x 11 x 7 cm loaf tin with non-stick spray. Beat the margarine and sugar together. Add the eggs one by one, beating well after each addition. Add the vanilla essence and mix well. Sift all the dry ingredients together, except the sugar and cinnamon. Add the dry ingredients to the margarine mixture, alternating with the yoghurt. Beat well after each addition. Mix the sugar and cinnamon together. Turn half the batter into the prepared loaf tin. Sprinkle half the cinnamon sugar on top. Turn the remaining batter into the tin and sprinkle the remaining cinnamon sugar on top. Bake for 1 hour or until a testing skewer comes out clean when inserted into the centre of the loaf. Cool slightly in the tin before turning out onto a wire rack. Makes a medium sized loaf.
