Preheat the oven to 200°C.Cut the sweet potatoes in half and push an apple corer into the centre, starting at the cut side and leaving the end closed. Remove the cored section.Add the sugar and cinnamon to the butter and mix well.Fill the centres of the potatoes with the flavoured butter and use a slice of the cored sections to seal the top. Wrap tightly in foil and stand upright in a baking dish (with the cut sides up).Bake for one hour or until soft.
