Cinnamon cream with poached fruit

    skim milk
  • 4
    cinnamon sticks
  • 100
    ml
    cornflour
  • 40
    ml
    sugar
  • 200
    ml
    red grape juice
  • 2
    bananas, peeled and sliced
  • 1
    each red and green apple, cored and sliced
  • 2
    peaches or pears, cored and sliced
  • 25
    ml
    sugar
  • 3
    ml
    cinnamon
 

Method

15 minutes
 
1. Heat the milk and cinnamon in a saucepan until almost simmering. Turn off the heat, cover and allow to infuse for 20 minutes. 2. Reheat the milk, then remove the cinnamon sticks. Mix the cornflour with 50 ml cold milk, then stir into the warm milk. Add the sugar and stir over a gentle heat until the mixture is thick and creamy. Set aside. 3. Heat the grape juice in a saucepan until simmering. Add the sliced fruit and simmer for 3 minutes. Serve along with the warm cinnamon cream and sprinkle with sugar mixed with cinnamon.
