Chorizo pasta

Ingredients

  • 250
    g
    penne pasta
  • 45
    ml
    oil
  • 1
    onion, finely chopped
  • 3
    cloves garlic, crushed
  • 4
    chorizo sausages, sliced
  • 150
    ml
    red wine
  • 400
    g
    (1 can) chopped tomatoes
  • 15
    ml
    tomato paste
  • 30
    g
    basil, chopped; extra for garnish
  • Parmesan cheese, shaved
 

Method

Cook the pasta according to the packet instructions until al dente.
Heat oil in a frying pan and sauté the onions until soft.
Add the garlic and sausages and sauté until lightly browned.
Stir in wine, tomatoes and tomato paste and simmer for five to 10 minutes.
Drain pasta and add to sauce, tossing to coat, and stir in the basil.
Sprinkle with Parmesan and garnish with extra basil.

Variation:
Use prepared stock in place of the wine.
Replace the chorizo sausages with cooked chicken breast strips.
