Chocolate truffle bar

    ml
    dried figs
  • 250
    ml
    dry sherry
  • 85
    ml
    cream
  • 450
    g
    dark chocolate, chopped
  • 130
    g
    butter
  • 100
    g
    hazelnuts, chopped roughly
  • 10
    large sponge finger biscuits
  • 50
    g
    cocoa powder, sieved, for dusting
 

Method

 
Place figs in a bowl with the sherry and allow to soak for a few hours.
Place cream, chocolate, 45 ml sherry from figs and the butter in a saucepan over a low heat and stir until melted and combined.
Place the figs, hazelnuts and biscuits in a mixing bowl and pour over the chocolate mixture, stir to coat.
Spoon the mixture into a greased 20 cm loaf tin.
Place in the fridge for three hours or until set.
To serve, remove the bar from the tin, dust with cocoa and cut into slices.
