    golden syrup

    butter

    vanilla essence
 

Method

 
Preheat the oven to 160 ºC (325 ºF). Grease a 30 x 23 cm baking tin with margarine. Beat the butter and castor sugar together until light and creamy. Sift the dry ingredients together, add to the butter mixture, mix well and shape into a ball. Divide the pastry in half. Wrap one half in plastic wrap and chill until needed. Press the other half into the prepared baking tin. Slowly heat the filling ingredients in a saucepan until the sugar has dissolved and the butter has melted. Pour over the pastry in the baking tin, spreading the mixture evenly. Grate the other half of the pastry over the filling and bake for 30 minutes or until done. Cool slightly and cut into squares. Cool completely before removing from the baking tin. Serve with coffee. Makes about 50 squares.
