    g
    dark chocolate, broken into squares
  • 4
    eggs
  • 80
    ml
    sugar
  • 10
    ml
    gelatin
  • 100
    ml
    warm black coffee
  • 400
    ml
    cream, chilled and stiffly whipped
 

Method

Melt the chocolate over boiling water or in the microwave oven on 50 per cent power. Stir frequently. Whisk together the eggs and sugar until pale and thick. Sponge the gelatin in the coffee. Fold the melted chocolate and gelatin mixture into the egg mixture, taking care the mixture remains light and fluffy. Cool and fold in the whipped cream. Spoon into small moulds with lids or into a large dish. Chill until firm and unmould if desired.
