    brandy

    raisins

    lemon, grated zest

    castor sugar
  • 300

    butter
  • 5
    large eggs
  • 300
    g
    self-raising flour
  • 100

    pecan nut halves or whole, blanched almonds
  • 45
    ml
    cocoa powder
  • 80
    ml
    sour cream
  • 50
    g
    pecan nuts, chopped
  • icing sugar, to dust
 

Method

Pour the brandy over the raisins and set aside to soak.
Mix the lemon zest into the castor sugar.
Beat the butter and castor sugar together until light.
Add the eggs and beat well.
Fold in the flour.
Put a pecan half or almond into each groove in the base of a greased ring tin.
Carefully spoon half the batter over the nuts.
Mix the cocoa, sour cream, drained raisins and chopped pecans together and spoon over the light-coloured mixture.
Bake in a preheated 180 °C oven until a skewer comes out clean.
Invert and allow to cool.
Dust with icing sugar just before serving.
